The coffee Cherries are handpicked and processed the same day with the natural method. Coffees dry on african beds and clay patios for 25-32 days. Finally coffees are sorted first automatically and then manually.
This Orange Bourbon has a great acidity with notes of yellow fruits and honey.

El Gobiado is property of the Alfaro family. Here, coffee grows grows 1300m – 1350m above sea level along 20 hectares of land. It is located in the Illamatepec mountain range within the department of Ahuachapan. It doesn’t rain that much and the average temperature is 27ºC.
The Alfaro family has been cultivating coffee for four generations in this farm. They grow mostly Bourbon. This varietal is characterised for its tall screen size, its low production, susceptibility to the major diseases but excellent cup quality.
After years of hard work, the Alfaro family has managed to optimise natural processing since it works exceptionally well for their Bourbon varietal. As a consequence, a tremendous amount of water is saved, which is good for the environment.
